3 year anniversary ideas?

June 30th will be our 3 year dating anniversary. We're the couple that does alot together and we're very "outdoorsy". Being born and raised in rural towns in Pennsylvania we spend most of our time hunting, fishing, fourwheeling, camping, and we're always with friends whether it be out the mountain drinking on a friday night or in our driveway. I'm not into the whole lovey dovey romantic side of things for every big occassion because it's not really what we want or what he enjoys. I want to do something to wow him so he remembers it forever and has fun! I was going to get him tickets to drive his own race car like they do in Nascar in the poconos, but it's $600 for 3 laps...I'm just about 21 and he's 26. He's a construction worker and I'm still in school so I'm not bringing home as big of a paycheck as he is(not like he minds). I'm running out of ideas and fast so please any ideas will be considered!
