1 year aniversery ideas?

okay all me and my fiance are celebrating our one year on june 16th we got engaged on christmas but its also my birthday and my 1 yr sober so its a big eventful day. we love to fish but since we live in wyoming its either raining snowing or windy as hell so a outdoorsy picnic fishing is out of the question. im looking to do something fun and creative but im not sure how. we live together so i cant really prepare somthing big. a poem isnt gonna cut it i need some unique ideas please help were a very adventurus couple and up for any thing so dont be afraid to throw it out there. thank you
